Shizuoka Sake Tasting: Suruga Brewery-Tenko Junmai Dai Ginjo Muroka Genshu (conducted at la Sommeliere in Shizuoka City)

I don’t mind repeating it all the time but I prefer conducting sake tastings in the right environment but not many places are propitious for that exercise or willing to help.
But La Sommeliere in Miyuki Cho, Aoi Ku, Shizuoka City is certainly becoming a habit as not only I can conduct my tasting in the best conditions possible but also exchange views at the same time!

This time we tasted a nectar brewed by an increasingly popular Suruga Brewery (Shizuoka City) which is already a lot of attention throughout Japan despite its very short history!

“Tenko/Heavens Rainbow” Junmai (no pure sake alcohol blended in) Daiginjo Muroka (unfiltered) Genshu (no pure water added)!

Rice: Yamada Nishiki (Hyogo Prefecture)
Rice milled down to 40%
Dryness: + 2
Acidity: 1.2
Alcohol: 16~17 degrees
Bottled in December 2015

Clarity: very clear
Color: light gold
Aroma: dry and very fruity.
Pears, banana, custard, chestnuts, young coconuts, green melon
Body: fluid, almost sirupy
Taste: dry and fruity attack backed with puissant junmai petillant.
Complex: custard, cream soda, banana, yogurt.
Always seems to reach the brink of sweetness without reaching it.
Lingers on for a short while before departing on a slightly drier note of custrad, oranges and faint almonds.
Will become markedly drier with salty foods.

Overall: Very rich sake if there were such a term!
Both elegant and very satisfying.
very fruity and sweetish at first but beautifully counterbalanced with swift, but in the right amount, acidity.
Could definitely be used as a superlative dessert wine!
Suggested pairings: Blue cheese!

I don’t mind repeating it all the time but I prefer conducting sake tastings in the right environment but not many places are propitious for that exercise or willing to help.
But La Sommeliere in Miyuki Cho, Aoi Ku, Shizuoka City is certainly becoming a habit as not only I can conduct my tasting in the best conditions possible but also exchange views at the same time!

Today the occasion was made the more special that it was Hiromi’s birthday (February 25th)!

This time we tasted a nectar created by Oomuraya Brewery in Shimada City, part of a series of 4 limited seasonal brews dedicated to the partner of their “Onigoroshi/Kill a Goblin”, that is “Oniotome/The Goblin’s Wife”!
This is the Spring edition called “Dream”! By the end of the end year they will get married!

It is not indicated on the back label, but the rice used is exclusively Shizuoka Prefecture-grown “Homarefuji” sake rice, which is getting much deserved attention from all over the country as it is a hybrid of Yamada Nishiki sake rice, but with shorter stems, and far more resistant to the climate vagaries. It has recently reached maturity as far as brewers are concerned as all levels of premium sake are brewed with it!

Rice: Homarefuji (Shizuoka Prefecture)
Rice milled down to 60%
Dryness: + 4
Acidity: 1.3
Amino acids: 1.1
Bottled in February 2016

Clarity: Very clear
Color: Faint golden hue
Aroma: Dry, flowery and fruity. Melon, rapeseed flower (“na no hana”), flowers
Body: Fluid, slightly sirupy
Taste: Dry and fruit attack backed up with puissant junmai petillant.
Complex and fluctuating.
Dry melon, rapeseed flowers.
Starts on a sweetish note before quickly turning dry.
Lingers for a little while before disappearing with tangerines and faint coffee beans and almonds. Melon makes a very late appearance at the back of the palate. Coffee beans will also make a late surge with further sips.

Overall: As usual a very elegant and complex sake.
Sake made with homarefuji rice has the intriguing particularity of fluctuating inside your palate revealing different facets in waves that can appear well after you thought it had completely departed. Don’t be taken aback if you are actually conducted a formal tasting and keep your pen in hand!
Will please ladies in particular, although gentlemen will appreciate its eclectic propensity to pair with many dishes if you decide to savor it along a repast.
Thoroughly enjoyable on its own, either slightly chilled or at room temperature, as well as all along a meal, be it an aperitif, a main drink, or a digestif!
Suggested pairings: “Asari no sakamai”/sake-steamed cockles, “Na no hana no karashi ae”/steamed rapeseed flowers seasoned in Japanese mustard, “Shinjo/Kyoto-style steamed white-flesh fish balls in light broth/”suimono”, Japanese-style scallops shuumai, White-flesh fish sushi. Foie gras as an aperitif!

Sugii Brewery in Fujieda City has made itself a name all over the country when it comes to experimentation in the brewing of sake and their latest nectar is another illustration!

Junmai Bodaimoto!
Bodaimoto/菩提酛 is an old way of making the moto/酛/sake starter dating back to the Muromachi Era (14th~16th Century) with a mixture of steamed and non steamed (raw) rice, natural lactic acid and yeast.

Rice: Shizuoka Prefecture rices
Rice milled down to 60%
Alcohol: 13.8 %
Dryness: + 5.5
Acidity: 2.0
Bottled in February 2016

Clarity: Very clear
Color: Faint golden hue
Aroma: Discreet, elegant and fruity. Green apples, persimmon
Body: sirupy
Taste: Very dry and fruity attack. Little junmai petillant.
Prunes, dry muscat.
Lingers only for a little while before departing on a drier note withdry apricots and persimmon.
Turns drier, more discreet and acidic with food.
Alcohol will surge forth in spite of its low contents.

Overall: A discovery from another era when taste buds were definitely different!
I personally loved its down to earth approach and fully appreciated with food although it might shock people used to milder sake.
A sake to enjoy informally!
Suggested pairings: izakaya heavy food, stews, pickles.

A very interesting and reasonable way to taste sake is to acquire one-cup sake!
They also make for cute collection of glasses or cups!

Now, this is the sixth tasting of the second batch of Shizuoka Prefecture One Cup Sake I obtained at Matsuzakaya Department Store in Shizuoka City!

Shidaizumi Brewery-Nyan Cup Shidaizumi Junmai Ginjo!
Actually, this is the original Nyan Cup which has now 4 different types all with different sake inside!

If you look at the inside of cup once empty you will find out that the cats look at with different eyes!

Rice: Yamada Nishiki
Rice milled down to 55%
Alcohol: 16 degrees
Bottled in July 2015

Clarity: very clear
Color: very faint golden hue
Aroma: assertive, dry and fruity.
Banana, pears, custard, green apple.
Body: fluid, a little sirupy
Taste: dry and very fruity attack backed up with puissant junmai petillant.
Complex. Bananas, dry oranges, faint almonds.
Lingers only for a little while before departing on a drier note with drier chocolate, custard and mandarin oranges.
Oranges and coffee beans will make a surprise appearance once in a while.
Turns drier with food with faint coffee beans appearing.
Stays dry all the way through with plenty of junmai petillant.

Overall: very elegant and extravagant one cup sake!
     I wonder if people understand its real value as a premium sake and as a splendid souvenir!
To take with you on any trip and to forget the crowds!
No wonder it sells out so quickly!

This time we tasted a classic by Oomuraya Brewery in Shimada City: Nagai Ki No Hashi Junmai Ginjo!
“Nagai Ki No Hashi” stands for Horai Bridge in Shimada City which holds the Guinness Book World Record of the longest pedestrian wooden bridge!

Rice milled down to 55%
Yeast: Shizuoka NEW-5
Alcohol: 15~16 degrees
Dryness: + 2.0
Acidity: 1.3
Amino acids: 1.1
Bottled in December 2015

SOM-OOMURAYA-4

Clarity: very clear
Color: faint golden hue
Aroma: assertive, dry, fresh and fruity
Lime, pears, green apples, banana, gin
Body: fluid
Taste: dry and fruity attack backed up with solid junmai petillant.
Complex. Green apples, dry custard.
Stays dry all the way through.
Lingers on palate only for a while before departing on strong notes of dry coffee beans, dry dark chocolate and dry almonds.

Overall: Both elegant and straightforward sake.
Can be enjoyed on its own at room temperature or as “nurukan” up to 45 degrees, or with a meal, especially as an aperitif as its dryness will disappear quickly enough and enhances the following glass of wine.
Actually drinks like a very dry Alsace wine!
Suggested pairings: sauerkraut, cold meats, feta cheese.

A one cup sake by Shidaizumi Brewery in Fujieda City

It is part of a series known all over Japan with cat designs and so-called Nyan Cups!
Although this one contains umeshu, it was originally created with junmai sake made in the same brewery!

That name “Rasta” is just great!

Alcohol: 11 degrees
Junmai sake
Ume/Japanese plums
Water
Sugar
Fruit juice

Clarity: very clear
Color: light brown
Aroma: assertive, sweet and fruity. Umeshu
Body: fluid
Taste: drier than expected and very fruity attack.
Complex. Sweetness will come with every sip to disappear quickly.
Lingers only for a little while before departing on a dry “ume” note.
Very pleasant alcohol.

Overall: an incredibly elegant umeshu, so different from most cloying products found on the market.
Its comparatively (for the market!) high alcohol content contributes to an unexpected complexity!
The ume/Japanese plum inside are of the crunchy type and quite dry.
The cup is so exquisite! A must souvenir!
To be indulged in any time, anywhere all year round!

I don’t mind repeating it all the time but I prefer conducting sake tastings in the right environment but not many places are propitious for that exercise or willing to help.
But La Sommeliere in Miyuki Cho, Aoi Ku, Shizuoka City is certainly becoming a habit as not only I can conduct my tasting in the best conditions possible but also exchange views at the same time!

This time I tasted another brew by Fujinishiki Brewery in Fujinomiya City!
It is a Junmai Genshu Nama called “Juku/塾/Matured”!

Rice: Nihonbare (Shiga Prefecture)
Rice milled down to 60%
Alcohol: 18~19 degrees
Dryness: + 6
Acidity: 1.8
Bottled in October 2015

Clarity: very clear
Color: golden hue, very similar to a white wine
Aroma: assertive, dry and fruity.
Muscat, raisins, custard, musk melon, hints of peach, ripe figs and chestnuts
Body: slightly sirupy
Taste: dry and mellow attack at first backed only with a little junmai petillant with some welcome acidity.
Complex: custard, peach, figs, chestnuts.
Lingers for while warming up the back of the palate before departing on a strong dark chocolate appearance.
Very easy to drink in spite of its high alcohol contents.

Overall: a very intriguing sake you can enjoy as a high class mellow white wine!
Will splendidly marry with practically any food.
Stays complex all the way through and showing ever-changing facets probably due to the unusual rice and the high alcohol contents.
Very unusual for a Shizuoka Prefecture sake.
A must-try not only as a sake but as a high class beverage for a whole meal.
You will overwhelm your guests!

Recommended pairings: ebi shumai, oden, cheese, chawanmushi, yakitori, terrines and pate.

This is a Hiyaoroshi, that is a sake pasteurized only once before bottling only.
It is not only a junmai but also a genshu, that is no pure water was added!

Rice: Gohyakumangoku (Fukui Prefecture)
Rice milled down to 65%
Yeast: Shizuoka NEW-5
Alcohol: 17 degrees
Dryness: + 4
Acidity: 1.6
Bottled in September 2015

Color: white wine-like golden hue
Aroma: dry and very fruity
Complex: pineapple, banana, apples, mango, apricot
Body: fluid
Taste: softer than expected dry and fruity attack back up by puissant junmai petillant
Complex: almonds, biscuits, custard
Easy to drink in spite of its high alcohol content thanks to the Shizuoka yeast.
Lingers on for a while warming up the back of the palate.
Varies little with food but for a drier finish.
Insistently asks for the next sip and cup, a true sign pf a good sake.

Overall: Intriguing, complex and very pleasant sake!
The type of sake you can enjoy during a whole meal from starters to desserts as an almighty white wine!
Suggested pairings, especially when slightly chilled: soft-style creamy cheese and nuts, cashew nuts, Japanese pickles.

Shimizu Minato Jirocyo!
That is, Shimizu ( a city of its own before it was merged into Shizuoka City) Minato (harbor) Jirocyo (pronouce “Jirochoo”, the name of the local hero!)!

Although Makino Brewery is located at the foot of Mount Fuji in Fujinomiya City, it has produced this special brew for quite some time.
Actually it is the only brewery in Shizuoka Prefecture allowed to call one of its brands, “Fujisan/Mount Fuji”!

Bottled in April 2015

Clarity: very clear
Color: faint golden hue
Aroma: assertive. Very dry and fruity. Almonds, roasted nuts
Body: fluid
Taste: very dry and fruity attack
Dry banana, acid custard, dry oranges, roasted nuts, biscuits.
lingers for a short while warming up the back of the palate before departing with notes of oranges.
Varies little with food but for an even drier finish.
Late but strong appearance of coffee beans and then dark chocolate.

Overall: a solid and uncomplicated sake fit for an izakaya!
The dry sake lovers will appreciate it!
Bring it to a BBQ!
Suggested pairings: yakitori, curry dishes, pork and sausages.

Clarity: very clear
Color: very faint golden hue
Aroma: dry and fruity. banana, roasted nuts
Body: fluid
Taste: dry and fruity attack.
Complex: roasted nuts, banana, custard.
Lingers for a while before departing on a drier note with strong hints of coffee beans and dark chocolate.
Changes little with food but for a softer if still very dry note.
Late appearance of oranges.

Overall: Straightforward, uncomplicated but very enjoyable sake.
Tends to show more complexity with time and rise in temperature.
Marries beautifully with food although eminently enjoyable on its own.
A sure value.
Suggested pairings: cheese, nuts, Japanese pickles, ham.

Combined with Mount Fuji to signify this is a sake from Shizuoka Prefecture!

Rice: Brewery-grown Yamada Nishiki
Rice milled down to 60%
Alcohol: 15~16 degrees
Bottled on March 18th, 2015

Clarity: very clear
Color: almost transparent
Aroma: Strong, dry and fruity. Dark chocolate, custard.
Body: fluid
Tasting: Dry and fruity attack
Complex: coffee beans, dark chocolate, nuts, custard.
Lingers for a while before departing on a softer note with late appearance of dry chestnuts.
Varies little with food, tends to blend with it.
Will turn again drier away from food with strong coffee beans.

Overall: far better than expected for a simple honjozo!
Although tasted chilled, would do well at any temperature.
The kind of sake that would please any one any time especially around a BBQ or a hot pot.
Suggested pairings: stew, yakitori, spicy food, cheese.
A sake for all seasons!

Alcohol: 15~16 degrees

Color: faint golden hue
Aroma: dry and fruity.green melon, asparagus, dry vanilla, custard, string beans
Body: fluid
Taste: very dry and flowery attack backed up by discreet junmai petillant.
Complex. Greens, asparaguses, dry watermelon.
lingers only for a little while on palate before departing on a dry note with late appearance of walnuts and faint coffee beans.
Dark chocolate appears with rise of temperature.

Overall: very elegant, dry and complex sake for such a simple gohyakumangoku rice.
Drink it first chilled before experiencing new facets as the temperature rises inside the glass.
Roll it around the glass to make it breathe.
Perfect for summer evening meals.
Marries beautifully with any cuisines as long as they include greens and fish.
Recommended pairings: katsuo tataki, cold pork shabu shabu, yuudofu, asparaguses in hollandaise sauce.

The other day once again thanks to her husband, my good friend Atsuko Kurata offered me this one cup sake by Shidaizumi Brewery in Shizuoka Prefecture but solely sold in Enoshima, Kanagawa Prefecture! as part of a batch of no less than 8 cups from 6 different Prefectures!
It is another version of the famous “Nyan Cup” registered design by Shidaizumi Brewery in Fujieda City!

Color: almost transparent
Aroma: assertive, dry and fruity. Custard, bananas, melon
Body: fluid, slightly sirupy
Taste: Very fruity, dry and well-rounded attack backed up with very pleasant alcohol.
Complex. Dry custard,oranges, green coffee beans, dark chocolate.
Lingers for a short while before departing on a markedly drier note with oranges, green coffee beans and herbs.
Varies little with food but for a marked appearance of melon.

Overall: Superb sake, A bit of a waste to sell it in one cups style but will serve as great introduction to the beautiful sake brewed by a Noto Master Brewer at Shidaizumi Brewery!
Elegant in spite of its marked dryness. very complex and keeping you alert for the next facet.
Eminently enjoyable on its own, but would splendidly marry with any salad, vegetable cuisine and cheese.
Do try with dessert.
At its best first slightly chilled and slowly drunk as its temperature rises!
Difficult to equal as a one cup sake!

After an interlude to introduce the new Shidaizumi One Cup Sake I can at last complete the first batch of 5 one cup sake from Shizuoka Prefecture before thinking about the next one!

This time it is one brew by Hana No Mai Brewery in Hamamatsu City!

They are always keen to advertise Shizuoka Prefecture gastronomy and Mount Fuji!

Rice: Homarefuji (Shizuoka Prefecture-grown)
Rice milled down to 60%
Alcohol: 15~16 degrees
Bottled on February 23rd, 2015

Clarity: very clear
Color: almost transparent
Aroma: dry and fruity. Raisins.
Body: fluid
Taste: very dry and fruity attack backed up with a little junmai petillant.
Raisins, nuts, mandarin oranges, custard.
Lingers only for a little while before departing with more dry mandarin oranges.
Varies little with food but for the appearance of dry chocolate and chestnuts.
Tends to become more complex when drunk with food.

Overall: Unusual sake for Hana no Mai Brewery. More complex than expected.
Elegant enough to be enjoyed on its own slightly chilled or at room temperature.
Would happily marry with any starters and cheese.

Continuing hopefully a long series of one cup sake from Shizuoka Prefecture, the sixth brew was concocted by Makino Brewery in Fujinomiya City: Fujisan Honjozo!

Incidentally only Makino Brewery in Shizuoka Prefecture and another in Yamanashi Prefecture have the right to use the word “Fujisan/富士山” as sake brand! They even share identical design labels!

Alcohol: 15 degrees
Bottled in February 2015

Clarity: very clear
Color: almost transparent
Aroma: Assertive. Dry. rice, coffee beans
Body: fluid
Taste: very dry attack backed with pleasant alcohol.
Coffee beans, apples.
Lingers only for a while before departing with hints of nuts and dark chocolate.
Takes on a slightly mellower note with food before quickly returning to very dry first impressions.

Overall: Solid and straightforward sake with a reliable and dry approach.
Obviously conceived to marry with food, izakaya fare in particular, but dry sake lovers will appreciate it on its own at all temperatures.
I personally enjoyed it slightly chilled with cheese!

Shidaizumi Brewery in Fujieda City has gathered fame all over Japan for their Nyan Cup/Kitten Cup design, a registered mark, both for sake (black and grey) and umeshu (green and colored).
They have just put out a new one to make the City of Fujieda all over Japan and beyond and remind everyone that the first-ever soccer game was played there!

The design shows Mount Fuji but “Fujieda” actually means “wisteria branch”, hence the symbol color of the city.
The cats are three, with one female bearing the number “12”!

She is flanked by two male soccer-playing cats bearing the number “11”,..

Bottled in April 2015

Clarity: very clear
Color: almost transparent
Aroma: dry and fruity. Rice, pears
Body: fluid
Taste: dry and fruity attack backed by junmai petillant and strong alcohol.
Complex and elusive: apricots, coffee beans, dry dark chocolate, nuts.
Disappears quickly on drier note of dark chocolate.
Stays true to first impressions all the time.
Varies little with food but for a slightly mellower note.
Coffee beans tend to make a strong comeback with every sip.

Overall: thoroughly enjoyable sake.
Great o its own but happily marries with food, particularly cheese, eggs and vegetable stews.
Definitely more elegant in spite of its dryness than expected.
Just too good for soccer players, a sake for rugbymen!

A very interesting and reasonable way to taste sake is to acquire one-cup sake!

The second one cup is called Shizuogokoro Sun Cup by Sanwa Brewery in Shimizu Ku, Shizuoka City!

Alcohol: 15~~15.9 degrees

Clarity: very clear
Color: very faint golden hue
Aroma: Assertive and dry. Rice, chestnuts
Body: fluid
Taste: Strong and dry attack backed up with pleasant alcohol. Coffee beans, chestnuts, dry almonds.
Lingers for a short while before departing on an even drier note with hints of dark chocolate.
Stays dry but with a slightly mellower note with food.
Chestnuts and dark chocolate will make a strong comeback away from food.

Overall: Another sake for dry sake lovers. True and easy to drink although obviously conceived to be enjoyed with food.
Would do well with any heavy food, but could be even more interesting with cheese and desserts!
Another sake to bring to BBQ”S!

I started with Eikun Brewery in Yui, Shimizu Ku, Shizuoka City: Eikun Flower Cup Futsushu!
Great cup to keep in store!

Clarity: very clear
Color: almost transparent
Aroma: assertive, dry and fruity. Rice, faint chocolate, banana, and coffee beans.
Body: fluid
Taste: very dry and fruity attack with a little acidity at first.
Complex. Pears, apples at first
Lingers only for a while before departing on an even drier note with hints of oranges.
The fruit stays for a while on the palate.
Coffee beans and dark chocolate also tend to make an insistent comeback with every sip.
Varies little with food but for a mellower impressions and more coffee beans and dark chocolate!

Overall: for dry sake lovers!
Far more elegant than its humble futsushu/normal sake would indicate although its relative acidity might surprise some.
Would happily marry with heavy izakaya fare.
A great idea would be to bring a few cups at a BBQ!

What I like about the sake brewed at Hatsukame Brewery in Okabe, Fujieda City, is that the brewery makes a sterling effort to present it beautifully!

This junmai ginjo simply called “kame/Turtle”, a sign of prosperity in Japan has been a long seller for quite a while!

Rice: Yamada Nishiki (Hyogo Prefecture)
Rice milled down to 55%
Alcohol: 15~16 degrees
Bottled in November 2014

Clarity: very clear
Color: faint golden hue
Aroma: Dry, fruity. pears, melon, lychees, hints of vanilla
Body: fluid
Taste: Very fruity, dry and mellow attack backed up with pleasant junmai petillant.
Complex: lychees, almonds, citruses, vanilla.
Lingers for a very short while before departing on a drier note with appearances of dark chocolate, chestnuts and oranges.
Varies little with food.

Overall: an eminently elegant sake one can enjoy as a semi-sweet sherry wine or instead of a white wine similar to an Alsace white at any time of a meal, although I best enjoyed it on its own.
Would do superbly with appetizers of any kind. Enhances cheese in particular.
A superb sake for a special occasion!

Shizuoka sake History: Former Inoue Sake Brewery Kura in Shizuoka City!

“Kura” (in Japanese 蔵 or 倉) means “warehouse” or “Storehouse”.
In traditional Japan, especially during the Edo Era, as most of buildings and urba/village structures were made of wood, fires were the bane of society by and large.
However well-protected a fire would consume a house or buildings and all its properties within minutes.
Hence a special building or warehouse was needed to protect goods and properties against such a catastrophe.
But erecting a storehouse solely made of concrete, stones and some metal cost a vast amount of silver and gold and only rich merchants and nobility could afford them. Even castles could not be built entirely of stone then.

In kutsunoya Cho, Aoi Ku, Shizuoka City, near the Atago Shinto Shrine Inoue sake Brewery used to stand there.
Unfortunately when hos father died some 13 years ago, his son working for Shizuoka Bank preferred money over culture and sold most of the land to a sushi restaurant destroying centuries-old tress and walls in the process.
Now only a house where his mother still lives and an abandoned kura bear witness of the past.

The kura was not pulled down because that part of the land could not be sold and it would cost too much money as the walls are still very solid.
On the hand the inside has been emptied of all past relics and stands empty and forlorn.

The wooden frame and lintels of the superb windows are going to dust.
